This wonderful chicken liver pâté hails from Ruthin, Wales, U.K. and is produced by my client, Patchwork Pâté. They boast a unique process for cooking and preparing their "Welsh Style" pâté, leaving it smooth and wonderfully spreadable, yet grainy and bursting with texture.
The perfect accompaniment to petite toasts or water crackers (see valley Produce below), this particular flavor of pâté is bold and savory and great when paired with a nice sauvignon blanc.
