Gruyère (pronounced Groo-Yair), originating in Switzerland, is a semi-hard cheese that has a rich, complex flavor. Depending on age, Gruyère can range from nutty when young and earthy the more it ages.
Gruyère is wonderful for baking and absolutely divine when shaved over risotto (especially when the Gruyère has been smoked).
When Gruyère is eaten alone, a fruity wine like a Riesling pairs beautifully. A fragrant, light bodied Pinot Noir is also nice.
