Ingredients:
Olive oil spray
2 cans of chunked turkey or chicken, drained or 2 cups roasted chicken, chopped
Half box of angel hair pasta or linguini
1 Shallot, sliced
Half onion, sliced
4 Cloves of garlic, chopped
Half tub of grape tomatoes, halved
Half can of chicken broth
3/4 cup of white wine

Half bunch scallions, chopped at the bulb and sliced long-ways at the stalk
3 cups of baby spinach leaves
3 cups of baby spinach leaves
1/4 cup sundried tomatoes, thin sliced
Sea salt (to taste)
White pepper (sprinkle)
Cayenne pepper (sprinkle)
Cracked black peppeer (light sprinkle)

Directions:
Cook pasta per instructions
Spray large skillet pan with olive oil spray
Sautee chicken or turkey, shallots, scallion bulbs, tomatoes, garlic and onions with seasonings until tender
Add chicken broth and white wine to skillet and lsimmer on low until liquid begins to reduce
Remove from heat and add spinach
Drain pasta
Add sauce to pasta pot and toss
Cook pasta per instructions
Spray large skillet pan with olive oil spray
Sautee chicken or turkey, shallots, scallion bulbs, tomatoes, garlic and onions with seasonings until tender
Add chicken broth and white wine to skillet and lsimmer on low until liquid begins to reduce
Remove from heat and add spinach
Drain pasta
Add sauce to pasta pot and toss
Top with scallions and sundried tomatoes
Serve with salad and bread
